The key thing to know is that flights determine the eye color of all your dragons!

Geeks tend to flock to Lightning; if you want to have access to spreadsheets of every possible fact and trend (and to help produce them!) join them. Otherwise, pick by eye color IMNSHO. (I'm Water, because I like blue. It's proven to be a mellow flight to be in.)

Lightning and Water were actually the two that I was looking at, because I liked both the eye colors and flavor text. But now it's down for maintenance so I can't choose.

Is it considered bad form to have two accounts?

Very bad form, and they'll cancel both your accounts if they catch you.

Oh, by the way, you can always have a friend in another flight hatch your eggs for you if you want to change eye colors for a particular hatch. If that ever comes up, I'm water and I'll egg-sit for you.
